Solution
for gaming, 9700K in a heartbeat.
Yes, it will cost $100 more than 2700x but that is a drop in the bucket for a top end build.
9700K will run at 5.0 while 2700K tops out around 4.3.
Few games can make effective use of more than 4 threads so there will be very little difference between 8 of the 9700K or 16 for the 2700x.

Some other thoughts:
It is not clear if you are reusing other parts which is ok.
If you are buying other new parts then:

16gb of ram @3600 might be better.

The value of the PRO versions is longer endurance; there is minimal performance benefit outside of synthetic benchmarks.

I might suggest a 960/970 evo in the 1tb size for everything.
It is easy to add storage later when you need it and when prices will likely...

Out of the two I'd opt for the 9700k. 20-25% faster single core/q-core speed. Unless you're doing some kind of rendering work the 9700k is a better option.

If you are partial to AMD, wait for their next cpus.

Problem is, i just seel my kit mb+cpu and I need something in few days.
If I will choose Amd with x470 and maybe this year with the Amd cpu I will change only the 2700x with 3700x.
With Intel, i think for at least 2 years no changes.

620w is fine, but I think you are looking at older tech Seasonic.
Look for Seasonic focus 650w.
