Before I fill out the template below I will just give you a brief overview of what I am aiming for so the template has context.

In the next 1-3 months I will be buying a new computer (or parts to build one) that needs to meet the following targets;

-Achieve all the targets below for the next 3 years minimum (preferably more though if tech exists that can achieve this)
-Play the all the latest gaming titles in 1440p at ultra/very high settings while achieving AT LEAST 60fps
-Allow me to embrace my inner audiophile, power my Sennheiser HD650's to the level they should be (a separate sound card?)
-Be portable enough to move around without fuss (Must be good looking too), maybe a smaller case like this- Lian Li PC-05SX

Approximate Purchase Date: 1-3 months

Budget Range: 2,000 USD if possible, will go up to 2,500 USD if it gives significant benefits.

System Usage from Most to Least Important: Gaming, movies, music, surfing.

Are you buying a monitor: Yes (this does not have to fit within the listed budget but I would like some suggestions here. Prefer 75htz +

Parts to Upgrade: Brand new build, will keep my old speakers, mouse and keyboard though.

Do you need to buy OS: Yes (leaning towards Pro over home edition due to a perception of better general stability, any thoughts on this?)

Preferred Website(s) for Parts: Any of the usual suspects

Location: I'm from New Zealand

Parts Preferences: Intel cpu and nvidia graphics please.

Overclocking: Yes

SLI or Crossfire: Maybe

Your Monitor Resolution: 1440p

Additional Comments: Need to have a window and lots of bling :D

And Most Importantly, Why Are You Upgrading: I'm having trouble running game X

Solution
Wow really? Only a 2070 and only 16gb of ram.

I admit I am no professional with computer specs but that build seems a little... well... low to me.

Remember I am happy to go up to $2,500 USD (3,700NZD) if it is going to make a significant difference.

I am currently running a 6700 (not K)
16gb 2400ddr4
gtx 1060 6gb

So I figure if I am going to upgrade I might as well go full out.

My bad. I read it as $2500 NZD.
There you go, best money can buy. It should be good for a long time...

I mean, what do you want to do with more than 16 GB of RAM? Are you running excessive 3D architecture software in several instances or similar?
16 GB is for the moment and the near future all you would need. For the time being even 8 GB are a safe choice for a well made gaming rig. RAM is not everything, as long as the other components are good enough. I would, honestly not go below 16 GB, but going over it, unless you use very demanding CAD software or similar, makes no sense in my opinion. Probably 3 years from now 16 Gigs will also be more than sufficient in a good system. Especially with a tight budget of 2 to 2.5 k you should invest the money in other places than RAM in excess of 16 Gigs.

And you should also keep in mind that the first build in the list, which you rejected due to having too little RAM and graphics, already costs more than your extended budget.
Two to two and a half thousand is nothing, when building a rig from scratch. You need to make compromises somewhere. Especially since you also want to buy a Win 10 Pro license, which can easily set you back 200 bucks alone. To create something that suits your above mentioned needs from ground up ... double your budget. A Geforce RTX 2080 TI will already eat more than half of your current budget all day long.
My PC, which I recently put together and is certainly not state of the art, already cost around 1300 US Dollars. But I didn't have to care about menial things like a Windows license or much bling on my PC, not to mention maybe a second graphics card for SLI or a Sennheiser level Soundcard.

Ha :)
Then I have to apologize.
I read it as US Dollars. Why don't they distinguish them by symbol ffs?
But, some of my points still stand, from my point of view. 2k US Dollars (even 2.5K) is not really a decent amount for the setup you asked for. Forget about dual wielding any graphics card and forget about a Sennheiser quality sound card right away.

I would, honestly, since your purchase time is a bit away still, wait for the next gen processors to come out maybe middle of the year. It might drop prices for the current gen.
