Anything pre-Matisse is unsupported on B550 so if that's your choice then the 3100/3500x are your only options.

For any of those processors, including the 2600, the B450 is an excellent choice. The really good thing about the Mortar Max is it's very likely to get a Ryzen 4000 (Zen 3) BIOS so you'll also have future proofing in that regard. The only thing you give up is...

The only thing you give up is PCIe gen 4 which is not that big a deal.

Go ASUS. They have been making better motherboards than Gigabyte or MSI since I was a 1y/o. Their VRM heatsinks are also larger, and I believe their heatsink designs are also patented. For example, this is an ASUS micro atx motherboard with B550. However, as your chipsets are concerned, the older b450s are still great choices. What graphics card are you running?

Your 1070 should be fine in a b450, both are PCIe 3.0, so you will get all the potential out of it. If you will upgrade again in a few years, get the b550, but if you want to save money, get the b450.
