A good $300-$500 GPU for this build?

Hello,

I recently ordered some parts for my first computer build however, the GPU (GTX 780Ti Super Clocked with ACX Cooler) I wanted has been sold out for a good amount of time, so I am looking for replacement! I am currently looking at the GTX 970 or the GTX 980, which one or any GPU would you guys suggest for the build below? As I said a good $300 to $500 price range is about what I am looking for. I wish to be able to run demanding games and render very intense animations for video editing. The build:

Intel Core i7-4790k
Crucial MX100 256 GB SSD
1TB Western Digital Blue Harddrive
Corsair CX 750W Power Supply
16GB Corsair Vengeance Blue Ram
NZXT White Case
Maaximus VII Ranger (Motherboard)
Noctua NH-D14 120mm & 140mm SSO Cooler (CPU Cooler)

I cannot change the bigger parts currently like the CPU and motherboard because I was expecting the GPU not to be sold out at the time, but I hope that doesn't cause too many issues. If you need any links just ask.

Also how do I tell how many monitors I can hook up to my PC? I looked into it and it had to do with the GPU, is it the amount of Digital Outputs or DVI outputs?

I like your suggestion except it is right next to $500 which I understand is in my price range but I am looking to shave off some cash. Do you think the GTX 970 SSC ATX 2.0 Cooler is better than the GTX 780Ti and overall is a decent GPU for a good price?
 
Then I would get a evga 970 then. they are great cards, and they perform very closely to a 980... in the future you could also sli. The corsair power supply is fine for now, but in the future I would upgrade. (around a year from now I would upgrade psu)
