So long story short, I recently did a fresh install of W10 on a different HDD, I have since formatted said HDD, however when I boot my PC I get a prompt to ask which OS I want to boot to?

How do I get rid of the previous install of W10 that doesnt physically exist anymore? is a reference in the registry or something?

Yes good point.

I the following:

Press Win key + R, type 'msconfig', boot tab, delete the previously installed unwanted W10 entry that was still showing.
And that almost certainly happened because you had the original drive still connected, when you installed on the new drive.

Physically disconnect the old drive and see if it still boots up properly.

Also, please show us a screencap of your Disk Management window.
