Question About Adobe Acrobat Pro DC and hardware acceleration

I use this program for work. I am currently on an AMD based (R7 2700X) with a GTX 1080.

Just for giggles the minimum specs are here:
https://helpx.adobe.com/acrobat/system-requirements.html
(which are sort of a joke)

I have 32GB of RAM and 16 threads available along with hardware acceleration on the Nvidia card. Everything works fine and I can convert pics and stuff fairly quickly, my wait time is on Dropbox syncing. I could not see how you could work a big image with what they suggest as minimum. Adobe is plagued with memory utilization issues...anyway...

Due to a recent security concern I am considering building a purpose built work machine and separating my personal computer from the work enviro/login's and such.
My consideration for the work build is around something like an i7 10700 (non K) utilizing some 2666mhz memory I already own. There will be no GPU and therein lies my question.

Are there any reviews or can someone give me some real world info on what manner of time penalty, if any, I would have by NOT having a GPU to leverage for converting images and compressing?
