I'm at a loss here. I was working with a bunch of excel and word windows open and then out of nowhere everything just cut off like the plug was pulled. It wouldn't start back up until cycling the PSU.

Recently upgraded from a 1060 to a 1070 for triple monitor gaming.

When waking the pc from sleep it took about 5 minutes to wake. Only clue was an nvidia error log report so I upgraded to the latest driver today. Did restarts, shutdown and bootup, and everything seemed fine.

The overclock is at 4.2ghz with everything on auto and the ram set to 3200mhz and 1.35v per it's requirement.

Thank you for your help.

Since you had to cycle the PSU's power switch to get it to reset that means that one of the PSU's protection circuits was triggered. It could be any one of the OVP (Over Voltage Protection) or UVP (Under Voltage Protection) or OPP (Over Power Protection) or SCP (Short Circuit Protection) or OCP (Over Current Protection) circuits.

I apologize I don't know what that means. It sounds like something a surge would cause but I have the system connected to a pure sinewave UPS. Also, the motherboard was also getting power but it never even showed the BIOS.

When a protection circuit is triggered it's not caused by a problem on the input side of the PSU (i.e. the AC side that's plugged into your UPS). The problem is on the PSU's DC output side where it's connected to the motherboard and peripherals.
