I was wondering if you could hyper-train Pick Locks by just
locking/unlocking one door over and over. I guess this would only be
useful if you have to lock a door in a pinch (such as monster chasing
you), since usually you're in no rush to lock/unlock doors, so you can
try it over and over... Climbing can be trained by falling in the same
pit repeatedly, so I was curious as to if Pick Locks could be trained in
a similar manner.

I haven't run any controlled tests on it, but it doesn't seem to help
train it too much, maybe just the maximum value that you can get it to
each level.

Yes, you can. Almost everything that actually rolls against any skill
value will train it. I just tested this one in-game to verify;
continually locking & unlocking the same door eventually netted me an
increase.
