Question Actual difference in SSD Performance

I am deciding between a few choices in ssd, either a cheaper SATA like the mx500 or more expensive nvme like the 970 evo or ex920. I'm looking at around 500 gb. but wondering what price point I should go for.
My real question is, how much does the difference in price actually affect noticeable performance? I will be gaming and not doing much else, also using the i5 9600k and rtx 2070, trying to keep costs at the ssd as low as possible but not sacrificing enough performance.

I experimented with this as I have a 960 Evo nvme and an 860 Evo sata. Forget the game, but level load on the 860 - 11 seconds. Same level on 960 - 10 seconds. So, in my mind not worth the price premium.
