Add M.2 NVMe SSD to Acer Predator Helios 500?

I hope I am posting in the right place. I bought an Acer Predator Helios 500 gaming laptop for mobile video capture and editing. The system has two internal M.2 NVMe slots. It comes with one 256GB internal M.2 NVMe. If I repopulate the slots with 2x Samsung 970 EVO M.2 NVMe SSD, can I put the stock 256GB NVMe in a Shinestar external NVMe enclosure, and clone it to the 2 internal drives in RAID 0? Or would I need to purchase a 2TB NVMe drive to get one large 2TB drive? (It costs an extra $100, and I figure that will cover the cost of the NVMe enclosure.) Thanks in advance.

Yes, it looks like it will do RAID 0, but apparently RAID 0 is not as stable, and realistically, a 1TB NVMe should be big and fast enough. (I need stability more than I need speed.) Just thought I should update this.
