Adding RAID to my system

I have two SSD's right now, and I have slots for two more drives not including m.2's. I want to put RAID on my system so I could get like two HHD's in my stem and add raid to them I was thinking RAID 1 two mirrors the drives to each other so if one goes down ill still have the information. I have two problems what HDD's and I will use them to put random information like papers and things. But I don't know if that is a good idea I use the SSD's for gaming and my OS. Also, I was wondering if I can add RAID to just the SATA's drives or do I need to take an image of my system and put everything back on the computer. Here are my specs
CPU - i7 7700k
GPU - Asus STRIX ROG 1080
RAM - Corsair Vengence 2x16 Gb 3000Mhz
MAIN SSD - 850 Evo 500gb
SLAVE SSD - 850 Pro 1Tb
Asus ROG STIRX Z270E Gaming

A server with dedicated RAID controller is one thing.
In your PC? Just have individual drives.
RAID is not a backup. Not even RAID 1.
It only helps in the case of a physical drive fail. It does nothing for the far more common forms of data loss. Human error, malware, lightning strike.

There are easier and better ways to protect your data.
