Will adding a Bluetooth audio transmitter to the ONKYO TX-NR636 allow connecting a wireless speaker in a different room of the house?

Yes.
Connect it to the zone 2 stereo audio output. That way you can use the receiver in the main zone while you use it with the BT speaker and even listen to a different source at the same time. The receiver manual will tell you how to use and control the zone 2 output.

If I connect the wireless speaker with the stereo output it won't be wireless, or am I missing something? I would like to be able to stream music from my 8270 to a wireless Libratone speaker.
