Advantage to the amount of sticks of RAM you have?

Basically what I'm asking, is there an advantage to having 2 stick of 4gb Ram vs 1 stick of 8gb Ram? Does it have to do anything with dual channeling them?

Really depends on what your doing games don't see much of a difference. Video editing/rendering or encoding etc. all see upwards of 10%
