Advice on my Component Selection for my First Video Editing/Gaming PC Build

I'm planning on building my first PC and after a couple of weeks of research I have come up with a list of components. I'm still not sure if this combination is optimal, hence my decision of coming here asking for feedback.

Approximate Purchase Date:
Within the next couple of months.

Budget Range:
€1000 - €1200

System Usage from Most to Least Important:
1. 1080p Video Editing (using Premiere Pro)
2. Gaming & Recording Gameplay (should be able to play and record the latest games in 1080p at 60fps in decent settings)
3. Possibility of having dual monitors (one main 1920p x 1080p monitor for gaming and video editing, and a secondary monitor for utilities, such as monitoring OBS and Audacity status while recording gameplay)

Mouse and Keyboard

GPU: MSI GTX 1060 OC 3GB: €219.90

SSD: WD Blue 250GB: €92.90
HDD: WD Blue 1TB 7200RPM: €53.90
HSK (Stock): €0.00
Case: ATX Kolink Vault: €49.90
PSU: Kolink 500W 80+ Bronze: €43.90

Overclocking:
Not at the moment but probably in the future. This build should be prepared for overclocking and the addition of a new HSK.

SLI or Crossfire:
Crossfire (I guess?)

Monitor Resolution:
1920p x 1080p

Additional Comments:
- Prices are adjusted to local retailer prices;
- Did not include prices for monitor (I haven't picked it yet) and OS

If your budget can go up to 1200€, I would consider perhaps do some changes:

MSI B350 PC Mate: €99.90 <- if you want to overclock in the future, Fatal1ty models usually are one of the best
GPU: MSI GTX 1060 OC 3GB: €219.90 <- 3Gb is very limited, either go with 6Gb or 570 4Gb
RAM: Corsair Vengeance 2x8GB 2400MHZ: €132.70
SSD: WD Blue 250GB: €92.90
HDD: WD Blue 1TB 7200RPM: €53.90 HSK (Stock): €0.00
Case: ATX Kolink Vault: €49.90
PSU: Kolink 500W 80+ Bronze: €43.90 <-- you might need a better one, EVGA 550w

Go with the suggestions and buy it in PC Diga 😉 good shop in Portugal, had few returns and they solved my problems super fast.

Thanks for the suggestions! I would just like to ask why do you consider the 3GB version of the GTX 1060 limited. I've seen some benchmarks where it scored great on some of the latest games and not too far from the 6GB version.
Also, regarding the PSU, I've made the calculations and my total output for this setup runs at about 340W. Is it more beneficial to get more wattage?
