When I plug in my v nand ssd and boot my computer, my monitor isn't receiving any signals. When I remove it and turn my computer on again it works. Any ideas?

Use of the M.2 port almost certainly disables one or more SATA ports on the motherboard, preventing actual booting up.
Look in the user manual for this.
