I'm planning to build a lan machine with 380T case. Just looking for advice for CPU coolers in a small case. I dont want to use AIO or custom loops to cool as I will carry the machine around quite often. The cooler i have in mind atm is Noctua nh-u12s but i dont know if it will fit or not/interfere with the sticks of ram. Please tell me if that cooler fits, and if not what's my next best option. I'm also planning on some mild overclocking on the CPU.

No the Noctua NH-U12S (at 158mm height) will not fit in the Corsair Graphite 380T (at 150mm CPU cooler clearance).
Some suggested alternatives (tower-type CPU Coolers that fit):
