mATX mobo with Intel Core i5 6500 with stock fan cooler, no OC, geForce gtx 1060 gpu, 8G RAM, nothing special. Should I really be that concerned about not having enough air flow/intake?

The P400S has a baffled front cover with only gaps at the top and bottom for intake whereas the Enthoo Pro M has mesh front for fans.

I'm leaning toward the P400S, but that closed off front panel is my sticking point.

Solution
Both are fantastic cases, I'd get the Pro M though, has more functionality imo and is smaller.
After you build your first PC, you look at your case and you want more, whether it be smaller or more functional.
The Pro M also has a Tempered Glass version for a premium.
