What is AMD Digital Display Audio? I have a PC hooked up to a monitor via DVI-D so I don't know what this is.

Would the gpu produce sound inside of the PC using hdmi if the monitor doesn't have built speakers?

no, best way to describe it is a graphics card is a sound card as well, to get sound from it needs to be directly connected to external speaker set

Common setups or uses (like consoles) where a graphics card is used for sound is in a living room with surround speakers connecting the PC's hdmi for video and sound to an avr.

Avr's like in the picture have an hdmi out for the Tv so can run the PC through the avr and get sound from the graphics card. 7.1 channels.
