Can I overclock the amd fx8320 with the stock cooler?

A stock cooler is meant to cool the CPU at stock speeds. You could do it but at a very minimalist OC so you would not notice any performance increase. Furthermore, the CPU would constantly be running at higher temperatures, decreasing lifetime. Buy yourself a CPU cooler first.

Depends on how much you plan to. To about 4.5 Ghz: Cooler Master Hyper 212 EVO. More than that look into water cooling. Before you invest the money think if you really want/need to OC

The motherboard I would be using is an asus m5a97 r2.0! This is my first build so I would not overclock straight away so would I be able to install the cooler later?

That board has a 4+2 power design , so it wil be decent for some mid-range overclocking with the EVO.
