Will the X570 series of Gigabyte motherboards work with older graphics cards, specifically a Radeon RX 570 8Gb? I will upgrade the graphics card in the next year or two if so.
Yes. Typically aside from some really old graphics cards you wont have an issue.
Although unless there is a specific reason to buy a X570 board for your needs, you can save quite alot and get a B450 board (as long as it has a compatible BIOS, or the BIOS can be updated without a CPU installed such as the MSI Tomahawk) instead.

Thanks. I'm just thinking of future-proofing by using the x570. Granted I'm switching over from an i7 to a Ryzen 5-3600 but I'm hoping future upgrades won't be as expensive.

There's really not a future proofing reason for X570 at the moment. Although PCIe4 is much faster then PCIe3 almost no one will ever see any benefit currently for using it with the exception of some setups.
Personally I would save the money, and put it towards the graphics card.
