I wanted to check in with individuals who are MUCH smarter than me, which is not that difficult, to make sure I'm making the correct choice when building a gaming PC and that the R7 7800X3D and the Corsair MP600 Core XT are the best choices. Also, this is very time-sensitive.

Thank you all in advance.

Yes, they will work together, but there are better drives out there, for a similar cost. That drive is a dramless QLC drive. You didn't state capacity, but for example a far better 1tb SK Hynix Platinum P41 is only $5 more, and one of the best drives on the market right now. The 2tb version is only $10 more.

PCPartPicker Part List

Storage: SK Hynix Platinum P41 1 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive ($79.99 @ Newegg Sellers)
Storage: Corsair MP600 CORE XT 1 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive ($74.98 @ Amazon)
Storage: SK Hynix Platinum P41 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive ($149.93 @ Amazon)
Storage: Corsair MP600 CORE XT 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive ($139.99 @ Amazon)

Thank you. Would replacing the R7 7800X3D with the R9 7900X3D be a better choice, considering the cost difference would only be an additional 41.00 USD?

Thank you.
