Which should i get considering the GTX 1060 3GB has much less VRAM but better performance? Don't want to buy a card for a while and want to play new games 1080p decent settings. Will the 8GB VRAM be a better option or will it not make a difference?

Thanks

In new games both cards are pretty equal and play BF1 (for instance) at 1080p at ultra settings. Here's a sample of OC comparisons of both cards http://www.bit-tech.net/hardware/graphics/2016/11/18/asus-radeon-rx-480-strix-oc-8gb-review/4

Standard benchmark comparisons of OC models: http://www.bit-tech.net/hardware/graphics/2016/11/18/asus-radeon-rx-480-strix-oc-8gb-review/3

The 480 supports freesync monitors, has more vram, more shader units, and great native dx12 support to future proof your investment. Some new games already support the new mGPU feature using dual GPUs. The 480 supports dual GPU thru Crossfire as an upgrade path when you need it.

In Addition

I doubt game houses such as EA, UbiSoft etc will be targeting specific AMD or nVidia card for their releases, because we're not discussing console machine then you should choose from those two that will give you better gaming experience (including higher fps on game you mostly play).

8GB vs 3GB
In gaming, well, relative, on other activity such as video editing or GPU rendering having bigger VRAM consider to be beneficial.

Display resolution
DisplayPort for 4K UHD, HDMI for 2K QHD/WQXDA, ... DP 1.3 can carry 3GB/sec data (with overhead removed) to be display on monitor, the fact is we won't know what file size the GPU will render on gaming, so I figure 3GB VRAM would be enough to play on DP connected monitor, 6GB VRAM on two DP connected monitor,....

3GB's is not enough for some games though.Shadow of mordor microstutters with 4K textures with 3GB's.GTA 5 too sometimes.I had a 3GB GPU its better to go for 8GB trust me.If you don't care that much about maxing out games then yes you could go with 3GB's but it's slowly becoming insufficient.

@ bluehawk55, it's true that bigger VRAM size is useful for some VRAM demanding titles (GTA V is good example, game play will run better if maps directly load to VRAM), we'll see if Rockstar North can work "VRAM usage" someday.
