Which cpu would pair better with a 6gb 1060 for just gaming, the i5 stutters worse than the 1600x and this is pretty important due to the fluency of games but the i5 performs marginally better in most gaming benchmarks.
which would be better considering overall performance in gaming?

Once again probably the most asked question there is at the moment.

7600k is better at gaming due to it's higher clock speed and higher IPC. Not to mention, i5 has superior overclocking potential than 1600x.
I am running a 7600k @4.8ghz with a hyper 212x cooller at 1.296v.
So, if you plan on gaming only then go for 7600k. but, if you are planning on gaming and as well as streaming then go for 1600x because 6C and 12T.
1600x outperfroms a 7600k in multitasking, so theres that.

If you don't own a 100htz+ monitor the ryzen 1600 saves you 50 bucks & performs absolutely fine , generally 80-90fps range on AAA titles.

I'd pick the ryzen personally ,if you were stuck on Intel then you should just ditch thebi5 idea completely & go for an i7 7700 & b250 board for about $10 more.

Solution
Having owned a few higher core count processors (Phenom II X6 for example)- I'd take the higher core count over the i5 any day. The IPC difference is pretty small (Ryzen is no Bulldozer)- and 6 cores / 12 threads I can pretty much guarantee is going to be a better bet if you intend to keep the system for a while. The i5 is only really better in older titles- the newer titles tend to use more threads and so the delta between the two vanishes and more threads are getting more common going forward.

As madmatt30 suggests- if you go intel go i7. 8 threads will last a while. 4... not so much.
