So, I'm building a PC from mostly second hand parts and don't know whether to get the 2200G or 1800X, any advice? (This is for a gaming/editing PC)

For gaming/editing the 1800X is the better CPU however it needs to be paired with a dedicated GPU as it doesn't have a iGPU (needed for display). The 1800X (new) is still quite pricey at around $260 where the 1700 can be bought for $160 which makes it a much better deal, especially if your going to manually overclock.
