I currently have the Asrock deskmini (stx formfactor ) and I wanted to try out a new mobo and have 32gb of so-dimm Id like to repurpose.

You could also look into the intel nucs. Almost all of those take so-dimm. Gigabyte bricks also take sodimm.
Zotac also has a bunch of mini pcs that take sodimm.

You can also just get sodimm to regular size ram adaptors.
