MSI GTX 1060 6GB GAMING X
I5 6600K OC 4.5
250GB SSD, 2TB HDD
16 GB 2133mhz

I want to play upcoming AAA games with 100+ fps

Depending on your PSU, the GTX 1070 would be the best upgrade for 100 fps at 1080p and 1080 for above that. Also depending on the game settings, of course. But you may be at the max for the CPU in some games.

I have a Cooler Master b500 v2

That is Cooler Master's "value" PSU line. The 500W model has +12v rail rated for 456W. I would consider that marginal but safe for the GTX 1070 and under powered for the GTX 1080.
