Well, your SSD is an off brand, that would be the only thing I'd worry about. Also, 1 TB of storage isn't bad, it just isn't that much anymore.

For your storage options I'd recommend one of two things. Thing one is a 2TB drive and an Optane accelerator. That will give you SSD like performance and net you twice the storage space. Thing two is a hybrid drive, part SSD and part HDD. Both cache the most often used files to an SSD buffer so that commonly used things load a lot faster than a standard HDD, but also give you additional storage.

You can pick up a reasonable 2 TB drive for around $60 and a 16 GB Optane module will run about $30. The Firecuda hybrid drive will be around $90 as well. Both options cost slightly less than your original storage options.

Otherwise your system looks pretty solid and should be a joy to game on.

GPU: Save a little bit by using GTX 1070 Ti over GTX 1080 because they perform pretty much the same now.
Memory: $10 difference you get a higher speed ram + rgb with the same brand.
Storage: Almost everybody uses M.2 SSD as their boot drive and it's much faster than the regular 2.5" SSD. We add 2TB for $59.

I do think that the hybrid drive would be the easier choice. Especially if you want to load up a bunch of games and movies or have a lot of pictures to store. You aren't going to loose too much performance vs an SSD and you are going to double the space you have. Plus it makes setup easier and saves you some money. Plus, nothing says you can't throw a much better SSD into your PC later, and you'll still have a 2 TB drive for storage.
