How thin or thick that you would apply to cpu / cooler surfaces?

you use a very small amount. The point of thermal compound is just to "connect" the heatsink to the CPU. Because Heatsinks are already designed to sit VERY close to the actual chip you don't need much at all. About a pea-size drop or two should be more than enough.
