are 2 cores enough for gaming vm?

I have the Intel Core i7-3970X Extreme Edition 3.56 GHz / 40gb ram and 3 MSI 1080 x
and want to use it for 3 gaming virtual machines...

So are 2 cores for every vm enough?

Depends on the games,there are plenty of games that will run great on only two cores,there are also plenty of games that will not run well on only two cores.

It's a 6/12 CPU for 3 VMs that's 2 cores and 4 threads for each game,that's plenty for all but the most demanding games.
