Are G-Sync monitors worth it?

And also, how many of these can a single 980 handle?

Handle for what? Full out 1080p 144hz Ultra Level graphics? 1, 2 maybe depending on the game. For youtube, as many as you could connect. Depends on the application.

I didn't say anything about gaming as I would likely only game on one monitor and use 1 or 2 others for other things

I love gsync, even 65fps/hz feels better than 60.

It will make you more fps hungry as 70-80plus is ideal but the motion clarity and smoothness is just great.
