Is the motherboard chipset overkill for the rest of the build?

You are paying way too much for a 1700x. They should be like:
$150 and get another $30 discount on the motherboard see:

And do you really want 2TB HDD? Wouldn't a 1TB SSD like this be bettter? Only $110:

Well, I Live in Canada, so the prices are different.

It cost me about the same for a 2TB HDD + a 500Gb SSD and a 1TB SSD

If 500GB SSD + 2TB HDD is the same cost as 1TB SSD, I would go 1TB SSD without a second though. The question for you is are really going to fill up that 2TB HDD all the time? I retired all my HDDs out of my systems like almost 12 months ago. I put all my 2+TB HDD into USB enclosures and use those as offline backups. My 1TB SSD have yet to get over 50% full yet.
