So i have a Cryorig H7 cooler and a Asus Prime Z270 A motherboard.
I was wondering if the backplate is supposed to be touch the motherboard? or is there supposed to be a gap?

It is up to the manufacturer. Some may manufacture the motherboard without a step to have a gap between the components. What you should really pay attention is if the screw are correctly positioned tightened and if the backplate is not bent (if it is bent, it is a signal of bad cooler installation or manufacturing defect and you should contact your mobo's manufacturer.
