Are those CPU overclocking noticeable in gaming ?

It depends on the over-clock yield and how sensitive the application or game is to shear clock speed of the CPU.

That being said, if you haven't taken measures to deal with the heat generated in an over-clocked CPU, you could actually degrade the performance of your application or game.

What is considered the maximum temperature for an overclocked core i5 with a coolermaster v6 cooler installed?

Your CPU will begin to throttle itself to prevent thermal runaway damage. It varies by CPU but tends to be anywhere from 72C-85C for most CPUs. Less heat is always better. Less heat equals longer component life. Ideally you don't want to break the 70C barrier under full load.

My cpu at full load goes to 73 degrees maximum temp.

Gaming will not usually put a modern multi-core CPU such as your i5 under full load. So those full load temps can be taken with a grain of salt unless your are doing full load video editing/rendering. They only mean to provide a "typical gamer" with the amount of processing overhead they have and how stable or not, your rig is. Prime95 is good one to use in this type of torture test but, there are many that can put your system under full load. Your system will likely not be able to reproduce this amount of load in any game.

BF4 with:
i74770k @ stock with Gigabyte780ocRev2.0 @ 1084 MHz
cpu: 75% load gpu: 95-100% load
4770k@4.3 with 780@1162
cpu:60% load gpu: 65-70% load

The above is 2560x1600, Ultra settings, plus 2xMSAA in game, plus NVidia control panel-Enhanced AA:16xQCSAA

Oh, and now it runs 60 fps constant with vsync on. Before it was 40-50's fps.
