Haven't played in a while, but beat @ Monarch a couple of times. One thing I
never figured out, though, is it possible to kick units out of an army
and/or upgrade the ones that are, wihtout disbanding the army?

Nope. Put your best units in it that are not elite. Even when it
isn't strong enough for a full attack anymore it is still good for
pillaging improvements. I sometimes send them deep behind the lines
to destroy stuff. The AI tends not to attack them unless they are
weak or they get really pissed at all the stuff I destroyed.

Nope.

However, if you play a Conquests game where there is plague, you can
put the army into the plague city and hope it takes out the units. It
isn't a great gamble, but it can work -- I don't know if it would kill
the entire army off, but it is a big risk if it can. Otherwise, just
emptying it wouldn't hurt -- but this is the only way that the game
properly allows it to happen (sigh).

Old armies are still pretty good defensively, the AI doesn't like
hitting them because they have lots of hit points, so you can use them
to guard other units, block key paths, or pillage.

Yes, the Army itself can be killed by the Plague. When that happens it kills
_all_ the units in the Army too.

I think it is a function of hit points. The AI tends not to attack full
strength armies in the field but if you move the Army to a city the AI will
attack it there. Weakened Armies in the field are sometimes Attacked.

I like to send on Army deep into enemy territory to pillage all the roads
around the enemy's capital. If the capital does not have a Harbor then my
enemy's trade network collapses and they won't be able to make units the
requires strategic resources, except in the cities that have the resources.

yeah, I like to do that either, and with some artillery behind that
army the effect is *devastating*..

Last game I played, I ended up with something like 10 Elite Modern Armour
which had produced Great Mil Leaders (Sumerians decided that they needed to
attack me with hordes of Knights and declared War on me after I told them to
get their maggoty butts off my land) I then added those to my 3 Armies,
since they couldn't create anymore leaders.
