I have almost the exact same build as you, and I went with the VIII hero. I felt it was the best choice for me. You cant go wrong with either option. The only downside of the Hero was no WIFI but thats not a big deal and easy to rectify. The BIOs on the Maximus provides more features and more control I believe. It is more suited for gamers, enthusiasts who want to get the most out of there system with easy tweaking. The deluxe also is an amazing board and has great features. Check out my build in my pcpartpicker link in my sig.
I prefer Deluxe over all. Onboard wifi may not sound like a deal braeker, but once you will use it, you will praise it. It got dual Lan ports, which is again a fantastic feature. Also Deluxe is been advised as the best Memory overclocking board in competition. Asus wifi-go is a nice app where you can remotely handle your system, when you started something on your system and you do not want to sit in front of it.
No problem in overclocking your cpu as well as i know that you wouldn't be overclocking like rocket speeds. Most of pals like to overclock with Asus's stock overclocking app or bios features.

Thanks for the Answer! We have almost the same specs lol, but i am gonna buy two GPU's. How does your board perform with OC?

OC'ing was a breeze, absolutely no issues at all. I was able to overclock my CPU to 4.5ghz with no bump in voltage. To get 4.6 I had to bump the voltage up a little. So I decided to keep the lower voltage with the 4.5ghz clocks. Im sure I can get it to 4.8 with a higher voltage too but I want to keep things stable and under normal temps. Memory is stable on the standard 3000mhz frequency, just had to enable XMP profile in the bios, but anything higher then 2133/2166mhz? memory is considered overclocked. I chose only 1 GPU because the 980TI is amazing, and Ive seen benchmarks that didnt really impress me with the improvements of FPS in SLI to warrant another $600+ right now. Plus I didnt want the headaches of multiGPU support/optimization. Maybe if DX12 and developers will allow stackable performance in SLI, one day I will. My GPU is overclocked 150mhz core and 400mhz memory. I am absolutely impressed with my current build and no games/software can shake a stick at it.

Ps. Dont for get to grab a CPU cooler as The 6700k doesnt come with one and I didnt see one on your list. I also hope you will be running ATLEAST a 1440p display going sli. Otherwise 1080p would just be silly.

Thats amazing! YES i have a cpu cooler, is the Corsair h110i GTX liquid cooler. I want to Run My game in really Good graphics and revolution. Btw i Just play prepar3d v3.1 is the game that Take more time playing with. I will have a power supply of 1000 watts, do you think i can OC to 4.8 - 5 mhz?

It really depends on the chip(CPU) you receive, some people get lucky while others not so much. I know 4.8-5ghz is obtainable but not meant to be run for long periods. You would definitely have to bump up the voltage to reach that and that causes degradation and heat. The longevity of the CPU life will decrease considerabily if you push it to hard. I would stick with a nice modest overclock 4.4ghz-4.6ghz and youll be absolutely happy.

Okay :)) I didnt know that part. 4.6 is absolutely Good for me.
