I'm just wondering if the ASUS ROG Strix GeForce RTX 3060 OC would fit into the NZXT H210i?

Yes easily. It can take up to 325mm (32,5cm) long cards. Nearly all cards will fit.

I'm more worried about the thickness rather than length, because NZXT says it'll only fit cards 44mm thick

That's practically a 3 slot card. The H210 is limited to 2 slot models.
