How many case fans can I connect to this motherboard

you have 5 header on the MB that can be used to connect fans.
Of course you can use splitters and hubs.
you have even 5pin fan extension header that can be used with asus board to provide more fans connected to MB.

If you don't mind is one the fan header's to the heat sink and where are the others having a little trouble figering out which one to use for 4 fans on the case

you have 2 headers near the RAM slots, 2 headers below the VRM heatsink with strix label and 1 header in the lower right corner.
the one labeled CPU_FAN (near the ram) would be better used for CPU, the rest can be used for any other fans.

The 2nd header by CPU header is a CPU optional header and I thank the 2 below strix logo is h amp fan and aio pump are those is the aio pump and CPU opt header safe to use for fans if those only 2 left for the 4th fan?

they all basically the same.
it's just labels.
well, the pump header can provide a bit more current. in the past the differences were much larger.
And the CPU fan header has additional alarm ...
