ATI 7970 Extended Display Lag?

Hey folks

Have a 7970 card and notice that quite often if having a video on one display playing, it causes my system to become sluggish and choppy. For instance if you were to drag a window you can see it's unsmooth.

Or the video will begin to lower in frame rate if the other side is smooth if that makes sense?

Lowering the resolution of one seems to help but surely the card is powerful enough to have them both run at 1920x1080? My old 6850 could handle it.

I'm on the newest drivers and connect one screen by HDMI and the other by a DVI-HDMI cable.

Really at my wits end in terms of how to solve it, so any help at all would be greatly appreciated.

Sorry, here are my specs:

Processor : Intel Core i7 2600K @ 3400 MHz
Physical Memory : 8192 MB (2 x 4096 DDR3-SDRAM )
Video Card : AMD Radeon HD 7900 Series
Mainboard : Asus P8H61/USB3
Operating System : Windows 7 Ultimate Professional Media Center 6.01.7601 Service Pack 1 (64-bit)

I generally use Media Player Classic or VLC for videos. Though the same happens in flash videos online as well. Or for instance if a game is on one display and a video/something else on the other.
 
This processor is more than enough.
Have you updated to the latest video drivers from AMD?

If so, you can try the following:
Click the start menu and type "performance" in the "Search programs and files" bar.
Click on "Adjust the appearance and performance of Windows"
This will usually be set to "Let Windows choose what's best for my computer".
Try setting to "Adjust for best performance". Apply the changes and see if it helps.
If so, you can go back in and tweak these settings yourself.
