It sounds like you just don't grasp the odds of combat.
Musketman is 2 attack, 4 defense. If you're using them to attack,
even against defense 1 units, they aren't going to do well. On
defense, if by archers you actually mean longbowmen (same era), those
have a 4 attack, and even odds on attack is going to get some wins in.
Cavalry has a 6 attack, spearman a 2 defense. Without terrain
modifiers, you'll win a good number of the fights. Pikeman with a 3
defense is much harder to take down -- if you're mistaking pikeman for
spearman, that would explain part of the problem.
But when you take into account the terrain defense bonuses the odds
are much worse. The AI rarely attacks with defense units, so the only
way that I tend to see musketman and spearman in combat is if I'm
attacking them.
I try to get the odds in my favor, and if I can't, I expect to take
heavy losses -- and still win, of course, if I haven't messed up too
badly. Just did a game where I went for global conquest (standard
map), and that was filled with warfare, hundreds of units running
around, and I never noticed any odd patterns. If I used my units
wisely, I won fights and took cities. It was kind of cool having 20+
modern armor armies (4 each) running around the map, doing major
modern era blitzkrieg.
But in the earlier era, there are times when it can be hard to get
the odds on your side. Cavalry has a nice attack but it isn't
powerful enough to overwhelm the defense; the best hope is that some
units run away. Cities larger than size 6 are hard to take due to
their inherent defense bonus, and terrain bonuses only add on to that
(AI will build cities on hills).
When dozens of units engage in combat, sometimes you'll have runs of
bad or good luck. They should even out, and if you only remember the
times when the "dice" went against you, it can confuse you.
