Where was the Evergreen supertanker when Portugal was on fire?
Could it be that hiring them for a job is too expensive?

AFAIK, it's not certified for use yet and is still undergoing flight / load
delivery tests.

Hypothetical situation then: what if a huge forrest fire broke out in
Colorado or California....would they use it even if it's not certified?

Nothing hypothetical about it...

We've had major fires in Arizona, Idaho and other places and no they did not
use it.

We had many aircraft and helos flying out of Falcon Field in Mesa, AZ
fighting fires this summer...but no 747 tanker.

Oh, okay.

The pilots of that thing have to be, IMHO, even better than the best Navy
or Air Force pilots. They have to come in low, watch their speed, release
on the target and pull out in time. The 747 wasn't designed to be a bomber,
but that's how they have to fly it.

I'm just a little worried that the jetwash (wake turbulence?) will light up
those fires again.

That's a piece of cake, according to Tom Hanks' character Jim Lovell in the
movie "Apollo 13". All you have to do is turn off your cockpit lights and
follow that big green trail of algae all the way in until you see the deck.
Presto! :))
