Benefits of Dual Channel RAM an Mobo Help

I was thinking of getting a new mobo/CPU with an AM4 socket, the problem is, I would need to swap my DDR3 RAM for DDR4, I found 2 options, both 8gb, 2400 mhz, should I go with the $70 single stick or the $100 two sticks of 4gb?

If possible, are there any places with cheaper RAM?

Specs I'm thinking of:
AMD Ryzen 5 1400 (anything better for the price, if you know?)
8gb RAM
Need a new motherboard but I'm not good at that stuff, need help on a budget mobo that is good quality and great for overclocking.
