Question Best 8 core CPU/Mobo combo for Ableton Live 10 and moderate gaming

I'm doing a new build, and want to get an 8-core processor for use with Ableton Live 10, and also do some moderate gaming (nothing Xtreme but definitely getting a better than average vid card) and simple video processing/editing. No overclocking planned and I would prefer a lower heat profile, stock cooling, and stability over eke-ing out that last 10% of performance. Open to either AMD or Intel, budget less important than versatility and future upgrade ability. The newer intel i9 chips seem hardly worth it, but a lot of people are complaining (in the reviews I have been reading, at least) about how hot the Ryzen chips run out of the box.

An AMD Ryzen 7 3700X with a Gigabyte Aorus Elite x570 Motherboard should do it. Total of 500$. They ryzen chips do get a bit hot but thsoe are only the stress testers. During regular usage and work flow they are at decent temps, and I have a 3900x, 12 cores. So I know how hot it can get.

The i9 runs hotter than any Ryzen.
