Pretty much across the board. Might be a few games that favor Intel out there if you looked at the 11700k/11900k

Single core performance is almost a straight tie though.
Fastest 8 core is the 11900K,
Best value for money is i7-11700K or the Ryzen 7 5800X, depends on personal preference

The 11900K isn't the "fastest" or the "best" 8 core processor. For pure performance the best 8 core processor right now is the 5800X and it is cheaper than the 11900K. In gaming performance you might find a couple titles here and there where the 11900K gets a win but overall the 5800X matches or outperforms it in gaming across a full gaming benchmark suite. To top it off the 5800X is selling on newegg right now for ~$450 and the 11900K is selling for ~$550... I would say the choice is obvious.

Gaming performance is primarily gated by the graphics card, not the processor.
A current gen processor in the $250 price class is going to do an adequate job for most.

Now if you are a professional gamer looking for the absolute fastest processor for 1080P gaming, then
5800X or 11900K are likely to be as good as it gets.
It may be that a particular game favors one or the other.
Here is a review of the 11400 which includes 5800X and 11900K
Look at the average 10 game performance.

Differences are minimal.

I know you didn't specifically ask, but if you look at (for instance) Tom's very own gaming performance hierarchy, there are a couple of 6 core/12 thread chips that are knocking on that top couple positions door for half the money....worth consideration for "just a gamer".

Agreed.

On newegg the 5800X is $424 right now and amazon has it for $399.

There are quite a few sources online wherever you look in addition to those posted above. Take off the Intel bias, they're simply not good enough right now. Hot and inefficient, the 5800x is easily the best choice.

Honestly every reputable reviewer I have seen all say the same things about the 11900K... Too expensive, too power hungry (runs too hot), not enough performance vs the competition. I think its important to remember that the 11900K is retailing for $550 and that places it at the same MSRP as the the much more powerful Ryzen 9 5900X (also $550). The Ryzen 7 5800X is selling for $100 - $150 cheaper than the 11900K and pretty much outperforms it across the board. When you compare processors based on their price brackets the 11900K has to compete directly with the 12 core Ryzen 9 5900X and its just a bloodbath... The only "review" I've seen praising the "performance" of the 11900K is from userbenchmark🤣 I think we all know and can all agree that userbenchmark is a total joke.

What is currently the fastest 8-core CPU for gaming?
Here is how the 11700K (stock turbo table, no power limits), the 10700K (stock turbo table, no power limits) and the 5800X compare with each other when tested with an RTX 3090.

Best value 8-core is the 10700K/10700KF, especially if you can get it with a discount as it was the case during the Amazon Prime day. You do lose PCIe4 though. The 11700K brings PCIe4, adds another 4 cpu lanes and another 4 chipset lanes while improving on productivity and iGPU for around $70 more. Then the 5800X for $30-40 over the 11700K drops the igpu but offers slightly better gaming performance (3-4%) and better power efficiency. And then there is the 11900K for a further $100 over the 5800X. The 11900K without power limits and with ABT on is up to 10% faster than the 11700K results presented here. It technically is the fastest 8-core gaming cpu but it comes with a disproportionally higher price and energy consumption so no one is recommending it over the 11700K.
