Once again, not knowing the resolution and games you want to play is imposible to suggest a card. And no one on earth will be able to guarantee a GPU will deliver 100+ FPS on all the games you wan try. I can only give you an advice of where to start looking, thats all.

-2x 8GBs 3200-3600mhz(whichever you get a better deal on) memory

What does the 3700X offer that the 3600/X doesn't? What, the extra 2 cores and 4 threads?
Geez, only a few games started hitting 8 threads - it doesn't progress THAT fast.
3700X is one of Ryzen 3000's worst cpu offerings. It tries to be a middleman, but fails HARD. It's not worth the price premium.
-Gaming? 3700X is less than 5% faster than 3600, and 3600X actually matches it. Both are significantly cheaper. Get one of the other 2 and either save your money, or put it towards a better cooler, or additional storage.
-Multitasking? Some people are too quick to dismiss the 3600/X the MOMENT somebody mentions 'multitasking, streaming, editing, recording', etc...
The 3600/X can do all that just fine.
You can game on something like COD: MW with 8 threads and 4 left over for streaming or recording - hell, the gpu has these features already! The cpu doesn't have to do everything - Check out Radeon ReLive.
20+ tabs of Google Chrome, Windows, Ryzen Master, Discord, etc... that's more RAM heavy than actually being thread bound. 16GBs is fine - don't wait too long for 32GB though, pricing's going back up.
What gaming + editing rig is going to use more than 12 threads at a time on a regular basis? The gpu can share some of that work.
Someone who actually needs those 4 extra threads from the 3700X isn't prioritizing gaming. Plus they'd be better served with a 3900X anyways.

Get a 3600X, slap one of the coolers I mentioned on it - or get the even cheaper Arctic Freezer 34 Duo. Far cheaper; you're not having to replace a 100USD+ AIO every 3-5 years.
For just gaming + streaming, etc., a SATA 3 SSD is plenty. An M.2 doesn't show it's real muscle until you're X-ferring files between other SSDs.
X-fers between the SSD and an HDD? Nope, performance is restriced by the HDDs speeds.
Uploads and downloads to and from the SSD? Performance depends on your ISP's speeds.
Intel's 660P is frequently at a good price, compared to other SATA 3s, even though it's an M.2. That's one of the few exceptions.

On a Gen 4 NVMe SSD like that Sabrient 1TB Rocket, if the ISP's provided speeds and other storage devices - if any - aren't up to par, it won't perform any better than a more affordable SATA 3 SSD.
