Solution
This would be a big upgrade. The SSD is NVMe as well. I didn’t see which PSU you have. You may need a new one if it is original or just an old one without C6/C7 support.

PCPartPicker part list / Price breakdown by merchant

CPU: Intel - Core i7-8700K 3.7GHz 6-Core Processor ($355.89 @ OutletPC)
CPU Cooler: Scythe - Mugen 5 Rev. B 51.2 CFM CPU Cooler ($47.99 @ Newegg Marketplace)
Motherboard: Asus - Prime Z370-A ATX LGA1151 Motherboard ($162.99 @ Amazon)
Memory: G.Skill - Sniper X 32GB (2 x 16GB) DDR4-3200 Memory ($305.98 @ Newegg)
Storage: Western Digital - Black PCIe 256GB M.2-2280 Solid State Drive ($89.89 @ OutletPC)
Total:...
Well, If you are going to upgrade both CPU and motherboard, the only reasonable thing to do is to save up a little bit more for new DDR4 RAM so you can get a new platform.
Actually with a budget of $1200, it shouldn't be a problem to get either an Intel 8th gen CPU or Ryzen CPU with new mobo and RAM.

Would you be able to post the parts i need to get? will i be able to keep my tower case and the 1200 W power supply?

M.2 is a SSD drive. There are basically 2 kinds, one is using SATA over the M.2 slot and the other is NVME enabled using PCIe over the M.2 slot.
The former is cheap and will perform the same as a 2½" standard SATA drive and other will allow for much higher speed but is also a lot more expensive and in daily use you probably wont notice much if any difference between the 2.
Also what is the exact model of your PSU?
