Question Best desktop to use in a computer workshop?

This may seem like a silly question but here it goes.
I'm starting up my home business as PC technician and would like to get a desktop to use in the workshop: such as to do backups for customers, connect drives to its SATA ports and so on. I wonder which would be a good workhorse for this. I don't need it to be that fast, all I want is functionality.
I'd welcome any advice.

Anything that runs, built from the spare parts you have laying around.

I could repurpose my (now retired) HTPC for this.
i5-3570k, 16GB RAM, 6670 GPU.
I'm thinking of getting one of these open options, not sure what would happen with the missing airflow though
