Question Best GPU For 2560x1080 Ultrawide

I am looking for a Graphics Card to replace my R9295x2. When games can utilize both GPU's, Great. But most of the time this isn't the case. I am replacing my R9 295x2 because it is water cooled and is about 5 years old. My monitor is a 2560x1080 Ultrawide monitor. I want 60+ FPS with Ultra Detail in all games. I am thinking either an RTX 2070 with a 2 year replacement plan for $570 or an RTX with 2 year replacement plan for $870. Would I get any benefit from the RTX 2080 at that resolution? Would either of these cards outperform the R9 295x2 even when crossfire was enabled? It just seems 2560x1080 is more demanding than 1920x1080 or else I could just look up simple benchmarks bit no one really benchmarks 2560x1080. Thanks.
