Best GPU for 3 2560 x 1080 Ultrawides

I'm trying to find a GPU that will work for my needs. I have 3 Lg 25 in 2560 x 1080 monitors. I use them mostly for work productivity but I do game on them as well. I normally only use (7680 x 1080) Eyefinity/ surround when I play DCS World or other flight sims. Other wise I only game on one monitor while I have other stuff running on the other 2. I won't be doing any VR gaming either. I have a budget of about $600 usd but I'd like to not have to spend it all on the gpu if possible. I've been looking at Gtx 1080, 1070, 980 TI, 980 and Titan X (maxwell). I need some help deciding where to go. Any advice would be appreciated.
