So I need a low profile graphics card with 2 x HDMi outputs, (I'm going to drive 2 1080p displays, maybe some 4Ks by the end of 2015).

I have come across 2 contenders:

VisionTek Radeon™ HD 7750 3M 4K UHD Three Monitor Graphics Card (900686)

and

Gigabyte GV-N75TOC-2GL

Which one will give me better performance? Right now I plan to watch TV/Movies on the cards, but I would like to move into gaming by the end of the year.

The VisionTek card bills itself as for 'Hospitality, Healthcare, or Commercial' use, but seems to be able to deliver 4K HDMI to 2 display independently. It's also a lot more expensive.

The Gigabyte card bill itself as 'Dual-Link' and I don't know what that means. It's much cheaper, but uses GDDR5.

I would appreciate a recommendation of these or any other cards.

Thank you.

The 750 ti is by far a better card than the 7750. The galaxy one you linked will work fine for 2 1080p monitors. However for 4k monitors displayport is the only port which will allow the monitor to run at 60hz. If you wish to use HDMI you'll have to make sure to get an HDMI 2.0 cable, any others will only support up to 30hz.

Gaming wise, the 750 ti will be alright for most titles on a single 1080p monitor, on the 4k you'll have to play most games on 1080p.

The card needs to be low profile because it will sit in a Small Form Factor computer, (the computer case is the one thing I cannot change). I not sure which games. I've stayed away for quite some time. Back in the day I played lots of Halo and GTA.
