You could save a bit more if you took the risk to use a 100 series motherboard and hope it has the updated BIOS for Kaby Lake.

Few words

Decided to compose purpose built PC just to play Fortnite and nothing else. That's also the reason i went with 4GB of RAM and smaller HDD. Without bloatware hogging the system resources, 4GB of RAM should be enough. Of course, added RX 560 and it's 4GB of VRAM is more than enough for higher settings. Also added a small cube-like case to reduce PC's footprint considerably where there's option to go either with red LED or green LED front fan for additional eyecandy. Case also has rear fan for proper airflow with option to install 3rd fan as side intake/exhaust. All that is powered by good quality PSU from Seasonic S12II lineup. Despite PSU's fully-wired design, it's solid PSU that will serve this build well.

Extremely experienced system builder here. We have the Fastest of the Fast that will fit in the budget for gaming:
Uses a 1050ti AND an M.2 SSD

Fastest video card you can possibly put in this build, PLAYS FORTNITE AT 4K over 30 FPS with decent settings. Fast m.2 128GB SSD, PLENTY of storage, Fast enough budget gaming CPU, motherboard has very mature bios at this point, NO ISSUES with the CPU not being supported out of the box, 8 GB memory, case isn't horrific looking and comes with a functional PSU inside that is WAY overkill for the power that the components will be drawing. UNBEATABLE.

Challenge: Build a cheap rig to specifically play Fortnite.
-
Result: 1080p, Medium detail; 60+ FPS: LINK: 3:40 markhttps://www.youtube.com/watch?v=DILqTvKoQCc&t=347s
-
Because Reasons:
MOBO: HDMI output, Firmware 4.40 for Raven Ridge! BIOS UPDATE NOT NEEDED!
RAM: (2x4GB), 1.2V, A cheap, QVL match was impossible but this is very close.
Storage: SATA 6.0Gb/s, 7200 RPM, 8mb cache. More than enough room for OS and Fortnite and more.
Case: Supports Micro ATX Mobo, ATX power supply, has intake and exhaust fans. Plenty of room to hide extra cables in the 5.25 bay. Compact at only 13.20" x 6.80" x 14.00" but still supports up to 315mm VGA card
PSU Plenty of power, high quality and PCI-e connections for future growth.

this build is to target under 400$ and with a bit of future proofing, it doesn't have the very best performance. but it will get you a very playable experience and offer a descent upgrade path. also the ram sticks are suppose to a gray and white. }
If i went for 500$ i would go with a arctic freezer 33 esports in white. and a 2400g, because those 5 extra fps would help keep it more playable, i went with 8gb of ram vs 4gb so as to not encroach upon possible resources for either the apu or the os. also the board i choose has 4 ram slots. so it could be expanded to 16gb without having to sell anything. Also i think it wouldn't look half bad either. form and function
